Hi, I'm Carol and I have been canning for over 20 years. I always loved homemade pickles and had the opportunity to learn how to can my own Dill Pickles from a friend’s sister. From that moment on my passion for homemade canning and experimenting with a variety of ingredients and flavors grew.
Creating my own twist on the standard is what inspires me to try new flavor combinations, especially when it comes to jams and marmalades. Additionally I enjoy experimenting and re-creating canned goods that my Grandma used to make or you can only find at specialty stores, such as Watermelon Pickles or Sweet Jalapeno Pepper Jelly.
Some of the differences I take pride in, is the fact that almost every ingredient used is Minnesota and organically grown from my garden. The only exception would be the fruit used in the jams. If not purchased from local farms, they will always be purchased and used at the peak of freshness during prime growing seasons. Additionally the taste difference in my Salsa and Marinara products comes from picking the tomatoes and peppers right off the vine from my garden and roasting them on the grill for a very robust flavor! You will find little to no salt or sugar in these recipes. Most of my jams are also a lower sugar recipe to provide a healthier alternative.
I reside in North St. Paul, MN with my son and daughter who both attend North High School. When not busy working my full time job at a national bank, or in the kitchen and garden with my part time business, I enjoy spending time with family and friends and volunteering in the local community.
